7 Layer Dip
Everyone needs this recipe. So simple for a light dinner and a favorite for potlucks.
7 Layer Dip - adapted from Betty Crocker
1 can refried black beans (or 2 cans of Frito-Lay bean dip)
1/4 c salsa
lite sour cream
guacamole
1 c shredded cheddar or colby-jack
1 can sliced black olives
3 chopped green onions
1 tomato, seeded and chopped
shredded lettuce
Find a large platter. Start with a layer of shredded lettuce. Mix the salsa and refried beans to your taste (add more salsa if you like it spicy). Spread a layer of guacamole over the beans. Top with a layer of lite sour cream. Sprinkle cheese on top. Then add black olives, green onions, and tomato.
If you are making this dip more than 3 hours ahead of time, omit the lettuce and add the tomato at the last minute.
Serve with tortilla chips.
