Easy Tortilla Soup
Easy Tortilla Soup - Parents Magazine
1/2 a rotisserie chicken, meat pulled from bones and shredded
2 quarts low sodium chicken broth
chopped cilantro
juice from 1 lime
chopped avocado
1/2 onion, diced
garlic to taste
1 tsp cumin
1 tsp chili powder
lite sour cream
crushed tortilla chips
shredded cheddar
Saute onion and garlic with olive oil in a large pot. Add chicken meat, broth, and spices. Bring soup to a simmer for 5-10 minutes. Remove from heat and add lime juice and avocado. Serve in large bowls and top with your choice of cheddar, crushed chips, sour cream, and cilantro. We enjoy it with warm Jiffy corn muffins with butter and honey.
